The immediate opportunity exists to help build the foundation of an artisan baking department that will compete at the highest level of breads, desserts, and pastries. With our newest location in Santa Monica, we have set an intention to create Los Angeles’s first TRUE farm-to-table diner. We intend to build a complete line-up of products that are both sweet and savory, created with a strong belief in from-scratch techniques and classical methods, while at the same time maintaining a strong point-of-view that is both young and modern. This position will be an essential part of a management team that will constantly strive to challenge the perception of what diner provisions can be. Our focus is on ingredients with only the highest integrity, building direct, long-term relationships with local farmers and other suppliers, and by showcasing thoughtful use of skills and techniques that allow these ingredients to take center stage.
The position will be responsible for managing our baking department’s daily systems including labor, scheduling, ordering, etc. This role will be centered on working directly with a team of talented chefs to design and execute recipes to be fully integrated into the menus of the existing restaurants, as well as propel the creative direction of future projects with artisan baking as a cornerstone of our organization. Also, hands-on training of hourly employees to maintain a high standard of quality and consistency will play a prominent part of daily responsibilities.
3 years artisan baking experience required, additional experience in a high-volume restaurant kitchen strongly preferred.
Desire to grow with the organization
Strong communication skills-some Spanish language skills preferred.
Experience working with natural ingredients, whole grains, and alternative flours and sweeteners preferred.
